Bruschetta Casserole




Grilled Pork Tenderloin with Bruschetta Casserole
Although I would have preferred veal, the pork was a good substitute.

I made up the Bruschetta Casserole recipe.


Heat oven to 400 degrees. Combine chopped fresh tomatoes from the garden, thinly slice quarter of 1 white onion, 2 minced garlic cloves, and sprinkle coarse sea salt. Spray with olive oil and balsamic vinegar. Bake for about 10 minutes.

Then slice french bread (Italian bread would be good too) and mozzarella cheese. Add on top of the mixture. Return to oven until cheese is melted. Top with fresh chopped basil. Serve.
